Celery and Red Onion Soup
Today, New Year’s Day, I’m going to fight that fatigue with a energy-packed superfood: celery. A late night means I always start to drop off around tea time, so here we go…
You’ll need
6 stalks of celery
One big red onion
Half a pint of stock
Black Pepper.
A dash of olive oil.
That’s it.
Chop and wash and then stick in a frying pan.
Put a lid on and simmer for 40 mins.
Before you blitz remove a handful of the reduced celery. Keep it to add back into the blitzed soup, just for some crunch.
Blitz the rest and reheat in a pan, adding water and the celery pieces until it’s just the right consistency.
The verdict: extremely yummy and surprisingly creamy in texture. A real winter warmer after a walk with the dog.

I used to use cream and lots of butter. Not needed.
