Roasted Potatoes with Spring Onions

Potatoes always seem to get a bad press in diets, but I’m afraid I refuse to miss them out altogether. If cooked with healthy ingredients they can still form part great meal. So…

Take some medium sized Maris Piper potatoes, peel, half and boil in salted water for fifteen minutes.
Have about six tbsps of olive oil in a roasting tray already heated in a hot oven.
Drain the potatoes and set to one side.
Take the roasting pan out if the oven.
Add the potatoes to the hot oil, carefully.
Sprinkle with sea salt, baste and put back into the oven for 15 mins
Take out, again with an oven glove, and turn the potatoes, add 2 handfuls of chopped spring onions.
Put back into the oven until golden. 10-15mins.

The verdict- crunchy, tasty with slightly caramelized onion flavours.
9/10 We all had seconds.

The lowdown on spring onions – packed with vitamin K, C and A they are reputed to lower the blood sugar levels, support against gastrointestinal problems, help with the common cold and help with circulation.

We served them with roast ham and mustard.
